Jersualem Artichoke’s on the menu …

The Annual Jerusalem Artichoke Scrub-Up at Sarah’s place last night – over 20kgs of tubers freshly dug from the community garden, scrubbed, blanched and vacuumed sealed ready for the freezer. Sarah reckons they’ll be good for 6-12 months with the vacuum packing. Thanks to Sarah, Saide and Gen for all that digging and scrubbing. We have some recipes on the website – here and here. And looking for more menus, obviously…

I can also think of some other uses – perhaps a source of bioenergy?!
